Atkins induction friendly
INGREDIENTS:
- 1/4 cup flax meal
- 1/2 teaspoon baking powder
- 1 1/2 teaspoons Splenda (or Monkfruit)
- 1 large egg
- 1 teaspoon butter
- 1 teaspoon cinnamon
DIRECTIONS:
- Put dry ingredients in coffee mug and stir
- Add egg and butter mix (I melted the butter and mixed it with the egg first)
- After mixing well, place in microwave for one minute (or more depending on your microwave)
- Remove from cup.
These muffins taste great alone, toasted, with butter or with cream cheese. Each muffin has 2.78 net carb per serving. One serving is one muffin. I hope you enjoy these muffins as much as I do.
