INGREDIENTS
- 1 head of cabbage
- 1 pound of ground beef (I used 80% ground beef)
- 1 14.5 can diced tomatoes-drained
- 1 large egg
- 4 cloves of garlic-minced (I doubled this in my recipe)
- 2 teaspoons Italian seasoning
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup of riced cauliflower (I used frozen riced cauliflower)
- 1 15 ounce can of tomato sauce
DIRECTIONS
- Preheat oven to 350 degrees (I set my oven at 400 degrees).
- In a large pot, boil water and add cabbage (immerse fully). Boil 5-8 minutes until leaves are soft enough to bend
- Remove cabbage and set aside. Save pot of water
- Stir fry the riced cauliflower for a few minutes. ( I did this by adding a teaspoon of Olive oil to my cast iron pot, heating it, adding the riced cauliflower and stirring frequently)
- In a large bowl, combine ground beef, diced tomatoes, egg, minced garlic, Italian seasoning, salt and black pepper. Mix until just combined, but do not over mix. Fold in the riced cauliflower and set aside.
- Spread half of the tomato sauce into a large rectangular glass dish and set aside.
- Carefully peel the cabbage leaves off of the core as they are fragile.Instead of peeling back, slide your fingers between the layers to release them. (the inner layers may be firmer and if so, return to boiling water to soften more.)
- Cut the thick rib from the center of each leaf, cutting a V shape at the thick end of the cabbage leaf.
- Place 1/3 cup of beef mix (log shaped) at the thick end of the cabbage leaf. Fold in sides and roll up like a burrito.
- Place the cabbage roll, seam side down, into the baking dish over the sauce. Repeat and make 12 cabbage rolls. (as the leaves of the cabbage get smaller, you may need 2 leaves to to overlap them)
- Spoon remaining sauce over cabbage rolls. Cover dish tightly with foil and bake 1 hour or until beef is cooked through
I was absolutely amazed at how delicious this dish was and I could not taste any hint of the cauliflower. The texture, however, did make it feel as though there was rice in it.
This dish makes 6 servings and each serving (or 2 cabbage rolls) has a total of 15gms of carbs, 5 gms of fiber bringing the net carbs to 10 gjrams per serving. Paired beautifully with a small side salad and the low carb dressing of your choice, you will feel completely satisfied.
