Welcome to Carb Controlled Cuisine. A blog that I hope with enable you and your loved ones to enjoy easy and delicious low carb recipes, learn how to better control your blood sugar, lose some weight and most importantly, feel better about yourself without felling like you are on a “DIET”. I will be sharing recipes that I have cooked for myself and my diabetic husband Michael, and will be giving you valid information on a variety of health related subjects that will be backed by websites that you yourself can follow up on.
My name is Dayle Chollett (Sha-lay). I have been a nurse since 1990 working in several different areas of nursing. But my true passion has always been Emergency Nursing. Not only was I able to help patients and families in emergent situations but I was blessed with the opportunity and ability to educate them as well.
I am not going to tell you that taking care of yourself will be a snap or that you will be dropping hundreds of pounds overnight, but I will tell you that lowering your carbohydrate intake will affect you in many positive ways. I am not going to tell you how many carbohydrates you should be eating in a day, but I will tell you that you should consult your doctor before making ANY drastic changes to your eating habits. I WILL tell you that drinking plenty of water is important, but as to the quantity…again, consult your doctor especially if you retain water or are on a fluid restricted diet.
I will definitely not be preaching to you. I’ve had that happen to me and frankly, I HATED THAT. The more people preached at me, the more I resisted. Not a good thing to do, but hey, I’m human. I’ve lived on and off a low carb plan for many years, and have “fallen off the wagon” many times. Thankfully I have been slow and steady for the past 2 years and have lost a total of 40 pounds (I know, not much), but at the age of 58 and not being much of an exerciser… yet, I can take care of our house, 6 dogs, 2 cats, 1 parakeet, 2 horses, a donkey, 5 chickens and 1 rooster (with the help of my husband of course) without feeling as though I’ve been drug through the ringer backwards. (p.s……I also work 36 + hours a week as a nurse in a surgical hospital). If I can do this than I have full confidence that you can too.
